Filter cleaning vs full exhaust cleaning
Filter cleaning and exhaust cleaning are different jobs. Filters are the first line of defense; the fire risk lives in the grease that gets past them.
Filter cleaning
Washing or exchanging the baffle filters in the hood. Kitchens often do this weekly or have a filter-exchange service. It helps airflow and slows buildup.
Full exhaust cleaning
Cleaning the hood interior, plenum, ductwork and exhaust fan — the parts grease reaches after the filters. This is the cleaning fire codes schedule, and what inspectors and insurers ask to see a certificate for.
You usually need both
Regular filter care between professional cleanings, and a full cleaning on the schedule your cooking volume calls for.
