What happens during a commercial hood cleaning?

Most cleanings happen after closing and take a few hours for a typical single-hood kitchen. Here's what a thorough crew does.

Step by step

  • Cooking equipment is covered and the area is wrapped in plastic to catch runoff
  • Filters come out for soaking or pressure washing
  • The hood interior and plenum are scraped and degreased
  • Ductwork is cleaned through access panels, as far as it can be reached
  • The rooftop exhaust fan is cleaned, and often hinged if it isn't already
  • Everything is rinsed, the kitchen is cleaned up and filters go back in
  • A dated certificate or sticker goes on the hood, noting any areas that couldn't be cleaned

Ask for photos

Good companies take before-and-after photos, especially of ductwork and the fan that you can't see yourself.
